It is said that the vegetable which came under snow is yummy. For example, cabbage is a typical under snow vegetable.

Under snow vegetable has a high sugar content. Vegetables make the sugar to prevent from frozen. Because sugar causes a freezing-point depression, so that it is difficult to froze what contents sugar, comparing to only water.
In this case, the kind of sugar is glucose. It is consisted by carbohydrate which is created by photosynthesis. Carbohydrate is usually spent for creating the new cells. So that, in the freezing temperature, vegetables stop to create new cell, and create glucose to protect itself from being frozen.
